Project: Mediterranean Chef
Basis. VMA did not find a standalone "Mediterranean Chef" brief among the documents available for this file. This section assembles the project from existing workstreams — the Meze Bar plan, the master-signed tray-meal concept of the Panayır v3 plan, and the open-kitchen chef in the Wellness Kitchen paper — and should be confirmed or corrected by the sponsor.
Mediterranean Chef is the human signature of the platform: automation and central kitchens deliver scale, but a named chef makes the premium believable. It is the layer that turns a product into a meal and a meal into a reason to come back.
1. Three formats
| Format | How it works | Linked source |
|---|---|---|
| Chef Meze Bar | A chef-staffed counter in the supermarket, supplied daily by refrigerated truck from the central kitchen — the supermarket sushi-bar model, applied to meze, with hot and cold range | Ā Levantine channel plan working decision |
| Chef-signed tray of the day | Daily trays designed and signed by master chefs, sold through Wellness Kitchen units, DTC and lounges; short video and story via QR | Panayır v3, Section 3 ("the whispering master") |
| Open-kitchen flagship | In flagship store-in-store units, a chef assembles trays live next to the kiosk | Wellness Kitchen paper, Step 2 |
2. Why it matters to investors
- Premium and trust: "chef-crafted" claims need a real chef standard; this is the DO & CO lesson (Section 05).
- Category education: Levantine cuisine is unfamiliar to many U.S. consumers; a chef who explains and recommends lowers trial risk — the role the 5th Table seal plays institutionally.
- Content engine: chef stories feed DTC and social media at low cost.
3. Decisions needed
- Chef roster and contract model (salaried culinary director vs. royalty-based signature chefs). The Panayır v3 plan names Yaşar Yılmaz (Panayır, çeşnicibaşı) and Sayat Özyılmaz (Dalida, San Francisco) as the tray-signing masters — recommendations only; nothing has been agreed for the U.S. platform (Section 04).
- Recipe ownership: recipes and standards should be owned by A Levantine / 5th Table, licensed to formats.
- Pilot: one Chef Meze Bar in the same region as the Wellness Kitchen pilots, so both share one supply route VMA assumption.
